Registered Dietitian's Office

The Registered Dietitian’s Office consists of two Registered Dietitian Nutritionists and five student nutrition assistants.

The office supports Campus Dining operations at University Park and other Campus Dining-operated campuses across the Commonwealth as well as the Penn State Bakery.

Key Areas

Nutrition

  • Develop nutrition standards and monitor compliance with standards
  • Handle nutritional and wellness programming for all Penn State Campus Dining operations
  • Supervise and train student nutrition assistants
  • Respond to customer requests, concerns, and special needs with accurate and timely follow-up
  • Approve, manage, and update recipe ingredients within a centralized database
  • Assist with recipe creation and approve final menus for Campus Dining operations

Food Allergy Management

  • Provide annual AllerTrain trainings to Campus Dining staff - both Registered Dietitian Nutritionists are AllerTrain master trainers
  • Ensure accurate nutrition and allergen information is available for all food items served by maintaining the nutritional database in the FoodPro software system
  • Guided tours of dining commons with a focus on food allergen management
  • Facilitate relationships between students, managing chefs, and dining facility management

Special Diet Assistance

  • Assist students with special dietary needs - including vegetarianism, veganism, food intolerances, and medical conditions requiring a specialized diet
  • Collaborate with University Health Services (UHS) Dietitian as necessary to accommodate students with dietary needs and potential health risks
